Thomond Gate Whiskey and Western Herd first collaboration. It is intensely flavoured, dark, with lots of chocolate, coffee and dried dark fruits, which perfectly compliments the characteristics of Irish Pot Still whiskey. This is a limited release with non-chill filtration and a natural colour. Each bottle has been hand filled, labelled and adorned with a unique coin engraved with the individual bottle number. This is a fresh Thomond Gate release that you won’t want to miss out on, especially in the run up to this coming Father’s Day.

This Bottle from a limited release of 270 Bottles was named in honour of Limerick’s bold and brave daughters of 1690 Siege of Limerick, taken from Cask N0. BB001 which was crafted from the finest American oak, kiln-dried and heavily flame charred to release the natural character of the wood and subtractive properties of the charcoal, then filled with distilled newmake Bourbon, transported to Great Northern Distillery, Ireland where it was filled in 2016, with Pot Still Irish newmake.

After 4 years of cradling the Pot Still, the cask was disgorged in 2020 and transported to Limerick’s Treaty City Brewery where it was then filled with an Imperial Red Ale. The cask was then returned to Great Northern Distillery, Ireland and filled with 2016 Double Distilled Malt Whiskey taken from a first-fill ex-Bourbon cask.

TASTING NOTES
NOSE
Aromas of orchard fruits Green Apple, Ripe peaches, brown sugar, roasted walnuts, raisins, with a modest element of charred oak, vanilla, and coconut.

PALATE
Creamy mouth-filling texture with flavours of Peach, Apple, Honey, Charr, Vanilla, White Pepper spice and roasted wallnuts.

FINISH
Long finish, the flavours unravel and evolve leading to a cascade starting with fruit and finish with wood spice with a warming embrace.
