A rich and complex Whiskey, finished in really fresh ex-Tawny Port casks, contributing fruit, richness and intensity to the Whiskey finishes.
The components are Single Malts from 2 of Ireland's finest distilleries (25% 14 year old Cooley and 5 year old Great Northern); all were initially matured in ex-Bourbon casks and the younger Whiskey was finished for between 9-12 months in ex-Tawny Port casks that we sourced ourselves through Port industry friends in Oporto. The freshness of the casks (3 weeks from emptying to refilling) made a fantastic addition to the quality Whiskeys we used without overpowering them. A finalist in this years Blas na hEireann awards, the winners of which will be announced on 2nd October.
We cut the Whiskey from cask to our 46% ABV bottling strength by adding water over 5-6 weeks so as not to stress it, making for a smoother drink in your glass. The colour is natural and we don't chill filter.
Batch 3 comprises of 1,000 numbered bottles (450 for Ireland) of 700ml
