'On the western shore of Lough Ree, on St. John’s Point peninsula, lies the abandoned medieval town of Rindoon. Built in the early 13th century, and estimated to have a population in its heyday of 1,000 people ( the population of London at the time was 20,000 ), it was a significant Anglo-Norman settlement of its time. Its a fascinating place, which unfortunately is closed to the public now, but having got a tour around it many years ago its definitely worth looking up.
And as a special place, we’ve named a very special Whiskey after it for our latest release of The Bridge series
Whiskey:
2006 Cooley Single Malt
Maturation:
14 year old Single Malt, matured for 12years, 4 months in Bourbon Cask and 22 months in a Montbazilliac Cask
Tasting Notes:
Nose: Rich summer fruits- strawberries & raspberries, with a hint of aged balsamic.
Taste: Chewy and mouthcoating with jelly sweets and marzipan.
Finish: Long, with golden sultanas giving way to cacao nibs and toasted almonds.
Overall:
A rare and most unusual release, this is the first Irish whiskey ever finished in a Montbazilliac sweet wine cask from France, imparting complex fruit and nut flavours to this single malt.
Like all of The Bridge releases, this is a non chill-filtered whiskey with no added colour.'
