We are delighted to have some of the recently released PX I Love You - 9 Year Old - Single Cask - Single Malt that was exclusively released for the Celtic Whiskey Shop!! Just in time for Valentines Day too!!

'The Whistler PX I Love You is part of the Single Cask series, was selected by Ally Alpine for the Celtic Whiskey Shop to best exemplify the deliciously decadent made by the the Spanish Sherry Pedro Ximenez Casks. This single malt is aged for 9 years and is limited to just 480 bottles.

Nose: Very enticing. Fruity and warm aromas of juicy tropical fruits, cappuccino coffee, sultanas, dates, milk chocolate, red apples and candied orange peel.


Palate: A lovely combination of fresh and dried fruits with a silky cocoa infused backbone. Flavours of fresh pineapples, mango, milk chocolate, ginger snaps, raisins, dried figs, and flambéed banana.


Finish: Some black pepper, ginger and hot pepper spice with dusty oak tannins and persistent dried fruits.'

P.X. I Love You

The Whistler P.X. I Love You Single Malt is a fantastic example of the decadence of the Pedro Ximénez sherry and the influence this fortified wine’s casks can have on excellent single malt Irish whiskey. Finished for at least 9 months in PX casks this single malt exudes delicious sherry influence. 100% malted barley, initially matured in ex-bourbon casks before being finished in ex-PX Sherry Casks for 9 months.

NOSE

Fantastically delicious sherry nose. Dried berries, raisins, cherries and sultanas/ golden raisins, with candied orange and sticky brown/ demerara sugar.

PALATE

Wood forward opening, with an incredibly viscous yet crisp palate. The dried fruits and brown sugar from the nose are joined on the palate by walnut, zesty citrus and a hint of leather.

FINISH

Walnut, dried fruits and the subtle wood prickle remain for a lengthy dry finish with a subtle hint of dark chocolate.

This Tiny Tipple is from bottle number 214.

A 17-year-old Single Malt distilled in Cooley 

Matured in 1st fill bourbon for 17 years, then in Pedro Ximénez sherry casks, Bottled at 46%, non-chill filtered and limited to 370 bottles. A rich, complex, full-bodied single malt that is subtly sweet on the finish.

This is the first ‘PX series’ release from W.D. O’Connell Whiskey Merchants – The beginning of a limited series of PX finished single malt Irish whiskeys.

Tasting Notes

Aroma:
Ripe red berries, candied tangerine skin, malted barley & vanilla dusted sultanas.

Palate:
Vibrant red berry coulis – red wine tannins meet fresh citrus, juicy redcurrants & tangy raspberry. Orchard fruits, light spice & oak tannins are intertwined with the Pedro Ximenez influence.

Finish:
A PX laden creamy mouth coating, delivering enough sweetness & weight to carry the red berries on long after the dram is gone.

The 3rd release in the PX Series is a single cask of 342 bottles and a return to the 70 cl format from the first PX bottling. The 19-year old single malt was distilled at Cooley and matured in first-fill ex-bourbon casks for 17 years before a second maturation for 30 months in ex-Pedro Ximénez sherry casks. Bottled at 46%, non-chill filtered with no added colour, it is a rich, full bodied Irish whiskey that showcases the continued progression of the limited series of Pedro Ximénez-influenced single malt Irish whiskeys.

An incredible whiskey. This release is limited to 348 bottles.
